I don't want to forget how I made those cookies, so I am putting it here while I still remember.
Mix together approximately 1 1/8 cups flour (I use a sort of coarsely ground whole wheat flour, I like the hearty texture it gives), 1/2 tsp baking soda, 1/4 tsp salt, and approximately 1/2 cup cocoa powder.
In a separate mixing bowl, cream together 1/2 cup unsalted butter (usually 1 stick), 1/2 cup packed brown sugar, slightly under 1/4 cup honey, and 1/2 tsp vanilla.
Mix in dry ingredients, you may need to get your hands in there to thoroughly mix it. Add 1 egg and cranberries. I have no idea how many I put in. I just poured fresh ones in until it looked like enough to suit my taste.
Baked at 375 F for approximately 20 minutes.
These cookies are so good that I want to have their babies. |
