Making drivers constantly twisting & turning, braking & accellerating, shifting through the gears like a drummer on a speed riff, it all combines to make racing fun to watch.
Personally, if all they're doing is going round in circles then it gets quite boring.
Sure you have to adjust for conditions, but the bulk of it is either passing on the inside, passing on the outside, or sticking your nose up someone else's tailpipe prior to passing.
There's no challenge to the course, you know there's a turn up ahead to the left in 5... 4... 3... 2... 1... NOW!
Bah.
Besides, it's much more fun to watch some guy misjudge an S curve, plow into the hay bales, & throw a temper tantrum at his car.
Or a Baja driver take a bump too fast, land too hard, & watch their car tires bound away without them.
"Uhhhh... Bob? Aren't those OUR tires passing us?" Shut up Phil & help me steer!
